Chop up ingredients

Whisk two eggs

Add to a hot pan and allow to spread around. Then sprinkle in all ingredients like a pizza.

Place a tortilla on top an press into the egg, rotating slightly to break egg free of pan.

Flip. I’ve been flipping onto a plate for this step then returning to the pan.

Sear the tortilla for a couple minutes to make it crisp flaky. Slide onto plate and roll up. May wish to use parchment paper to roll. It will be very hot.
